Leftovers

I hope you all had a wonderful Thanksgiving with your families! I think Thanksgiving is my favorite holiday in some ways...maybe because I like to cook and then lap up all the compliments. :)

I got my early Christmas present of The Pioneer Woman Cooks in the mail Friday (ordered from amazon.com) and tonight I made the chicken potpie recipe, except with leftover turkey. Everyone liked it and I don't have to feel bad about wasting all those good leftovers. I think this is the first year that I've had enough leftovers to actually make more than a couple of turkey sandwiches. Maybe everyone was too distracted by all the side dishes and pies to eat much turkey.


What do you do with your leftover turkey if you have any?

We save the carcass and whatever bits are left over and make turkey-noodle soup. It's a nice light meal after Thanksgiving and it goes well with the legions of leftover dinner rolls we always have hanging around.

I was just thinking of making a turkey pot pie with the leftovers (for the first time ever) and then I opened your post. A sign, perhaps?

Is this recipe on her website or only in the book. I want her book so badly I've been entering contests all over the internet. :) Maybe I'll pick up a copy on my next trip to the States.

I've done pot-pie before - yum! If we have enough of everything we love to have turkey dinner number 2 the next day. Sandwiches are always good, and I do the turkey carcass soup every year, too.

The pot pie looks yummy! We usually make sandwiches and pot pie like you did if we have enough leftovers.

We like to make hot turkey sandwiches. Slice of bread, then turkey, then a layer of stuffing, a little gravy and topped off with swiss cheese. Then under the broiler for a couple of minutes. It's my favorite part of Thanksgiving!

I'm sure Thanksgiving at your house was absolutely delicious. Let us know if you like the Pioneer Woman book, I haven't decided if I want to buy it yet!

Jayne, yes I do like the cookbook very much and it's on sale for $12 or $13 (can't remember exactly) at amazon.com. Plus I have a month's free trial of amazon prime so I get 2 day shipping for free this month.

You know, I can eat turkey once or twice per year, but anything more than that, I just can't do. =)

And leftover turkey is a no go for me, it just makes my stomach churn for some crazy reason.

But a turkey pot pie doesn't sound too bad at all. =)

Mmmm looks yummy! It's always used for sandwiches at my house, along with the stuffing, cranberry sauce, etc
