Russian Tea Cakes
These are the cookies from yesterday's pictures. I made them Saturday and they are already all gone! They were SO good! They just melt in your mouth.
I found the recipe at BettyCrocker.com.
1 cup butter softened (I used real butter)
1/2 cup powdered sugar
1 teaspoon vanilla
2 1/4 cups flour
3/4 cup finely chopped nuts (I used pecans)
1/4 teaspoon salt
Powdered sugar
1. Heat oven to 400 degrees.
2. Mix butter, 1/2 cup powdered sugar and the vanilla in a large bowl. Stir in flour, nuts and salt until dough holds together.
3. Shape dough into 1 inch balls. Place about 1 inch apart on ungreased cookie sheet.
4. Bake 10 to 12 minutes or until set but not brown. Remove from cookie sheet. Cool slightly on wire rack.
5. Roll warm cookies in powdered sugar; cool on a wire rack. Roll in powdered sugar again.
The recipe says it makes 4 dozen cookies, but I made mine a little big so it made about 3 dozen.
those look delicious, they remind me of the pecan sandies that I made for Christmas many years ago, I was going o make them into long finger shaped cookies, and kind of ended up with cookies that looked like brass knuckles. I thought that they would even out with the heat, but I was wrong. they sure did taste good though.

My mother always made these cookies evry year for Christmas. She called them Sand Tarts. My father loved them and we knew it was the beginning of Christmas when she started her baking. Thanks for the post , it brought back very nice memories.

ReplyDeleteMy mother always made these, too, but she used almonds and called them Almond Snowballs. I make them without nuts, as my daughter doesn't like nuts. They're still yummy!
