Fall is always such a busy season for us and even more so this year. As much as I try to keep things simple, sometimes they just aren't. Daily life seems to get complicated so easily doesn't it? The rotisserie chicken at the grocery store has become my best friend. Talk about convenience! It makes chicken spaghetti or chicken enchiladas so much easier or we can just eat it as is, open up a bag of salad, steam some veggies right quick and we are ready to sit down to a good meal. I don't even have to plan ahead which is frankly not happening much lately.
What are your favorite short cuts in the kitchen when life gets busy? I love to "ask the readers" because you ladies are the most creative and resourceful bunch I know! :)

I buy a package of frozen chicken breasts and always have something in the pantry that can go with it. I can throw it in with yellow rice, grill it with vegetables, or make chicken tacos, all quick and easy :)
Lurve the pumpkin pic. Gets me in the mood for pumpkin muffins! My weekly shortcut is on Fridays I set my crockpot for stew or soup based on the weeks leftovers. I'd I'm heavy in chicken and pork it's usually soup. If it's beef it's usually stew. I add leftover veggies or add fresh with some cans of stewed type tomatoes and mini pasta or rice accordingly to either the stew or soup. Then I add the seasonings in the manner. Finally I set the bread machine and dinner is ready when we walk in the door that evening.

Sometimes we buy bread at the outlet store. It's not the healthiest stuff around, but the label boasts, "NO HIGH-FRUCTOSE CORN SYRUP" and it's cheap. :)

I buy very large packages of ground meat, brown it all at once and freeze it in smaller batches, so I can have tacos, pasta, taco soup or what have you in no time.
Also, I freeze some meals so I onyl have to defrost, like meatballs, red beans and sausage.
Oh my goodness, I don't really have a unique shortcut to pass along to you, but you sure have passed one on to me. The rotisserie chicken idea for my homemade chicken enchiladas! I have never thought of that before. Thank you so much. What a time saver that is.

I try to make a pot of brown rice while I'm cleaning house once a week. Brown rice takes FOREVER to cook. I cook it in the morning while I clean, then put it in single serving containers for lunches or dinner.
