I have sure spent a lot of time in the kitchen this week, :) I usually cook from scratch, but we often have cereal or I'll microwave some oatmeal for breakfast. We also usually just have popcorn or something easy for a snack. Maybe that's why my housekeeping has suffered this week...I'm always cooking or doing dishes.

HBHW Menu Day 5
Yesterday was day 5 of following the Hillbilly Housewife's low cost menu. Last night we had soft tacos with homemade tortillas. I don't yet have the knack for making them round, but they sure turned out tasty. :) I need to make this more often. Everyone loved it.

I love, love, love homemade tortillas. In fact, I have a recipe on my blog for them. The only part I hate is the rolling out and mine aren't that round either ;-).
mine ended up being almost square, lol. I had made the refried beans recipe, and then we had burrito's or whatever they would be called. They turned out pretty good! I love HBHW!
Are y'all still eating off of those four loaves of bread? I'm afraid the bread wouldn't last that long at my house. My family would eat it all the first two days with butter and jelly. lol

Hi. All of the Hillbilly Housewife meals have looked tasty. I will be looking at the menus. I have printed out your bread recipe and plan to try it this coming week.
I have made it through the week without going all to pieces again over how to manage on one income. I've just been trying to lean on God. My husband did go over the budget on groceries, by using some money from the emergency fund. To him, it was an emergency! We definitely had enough food in the house to have stayed alive, but there were no fresh fruits or veggies left so he went to get some. I didn't fuss, knowing his aim was to keep us fed and healthy -- he wasn't buying junk. We'll figure out how to do this, somehow, and seeing these good meals really is inspiring.
I tried this recipe but my tortillas came out very dry and broke easily. Probably my fault, though - not the recipes!
